Encoiros 2022 is a natural white wine made by Adega do Vimbio, a family winery founded in 2012 by Martín Crusat and Patricia Elola in Goian, Tomiño. Their project stems from a commitment to sustainable agriculture, recovering family winemaking roots with a respectful approach to the land and the environment.
The Veque and O Gaiteiro vineyards, 30 to 35 years old, are planted in slate and clay soils, which provide freshness and minerality to the wine. The winemaking follows an artisanal method: whole cluster pressing, fermentation with indigenous yeasts and no added sulfites, preserving the authenticity of the terroir.
Encoiros 2022 is bottled at the end of fermentation, unfiltered, retaining a subtle residual CO₂ that gives it vivacity and freshness.
