Located in the parish of Goián, in Tomiño, Adega do Vimbio works with an artisanal approach, sustainable practices, and a philosophy of minimal intervention. Their wines are born in an Atlantic environment, with schist and clay soils, and seek to express an honest, fresh, and gastronomic Galician identity.
O Acordo is a natural Galician rosé wine with a fresh, lively, and gastronomic profile, made with an artisanal and minimal intervention approach. The grapes are hand-harvested and fermented with natural yeasts, without temperature control, to preserve an authentic and direct expression of the wine.
Afterward, it remains for five months in stainless steel tanks, maintaining a sensation of freshness, tension, and lightness on the palate. Its subtle residual CO₂ provides vivacity and makes it an ideal accompaniment for artisanal preserves, seafood appetizers, and gourmet Galician-inspired dishes.
This wine reflects Adega do Vimbio's commitment to quality, authenticity, and artisanal winemaking, being one of its freshest and most original expressions among Galician rosé wines with an Atlantic profile.
