Located in O Rosal, Adega do Vimbio is renowned for its focus on artisanal methods. Its vineyards, situated on shale and clay soils, provide an ideal environment for the production of high-quality wines. The winery stands out for its commitment to sustainable practices and minimal intervention in the winemaking process.
The Albariño and Sousón grapes are hand-picked and fermented with natural yeasts, without temperature control. The wine is aged in stainless steel tanks for five months, maintaining a minimal intervention approach.
This process allows O Acordo to maintain its characteristics, including the presence of residual CO2 that gives it freshness and vivacity.
O Acordo symbolises Adega do Vimbio's commitment to quality. This Atlantic rosé wine is a reflection of the Galician terroir and the winery's winemaking philosophy.
Tasting Notes
O Acordo stands out for its freshness and originality, the result of a blend of Albariño (75%), Sousón (15%) and Caíño tinto (10%). The last two are red grapes.
This blend gives it an interesting structure, where the red grapes provide body and complexity, while the Albariño maintains the characteristic freshness and acidity. On the nose, notes of fresh red fruits, flowers and a hint of herbs can be perceived. It is fresh, balanced and very pleasant.
