From the first sip, you will be enveloped by its deep and complex notes, the result of meticulous and environmentally friendly production. The vines, aged between 15 and 90 years, grow on the Perdecanai plot in the Barro area, on soils rich in sand and silt, supported by a granite subsoil. This unique terroir gives the wine a distinctive minerality that is intertwined with the intense aromas of red fruits and wild herbs.
The winemaking process, carried out with artisanal care, begins with a manual harvest and foot-crushing, followed by maceration and spontaneous fermentation for 21 days. The wine then rests in used French oak barrels for 11 months, where it develops its complex and elegant character, without losing the freshness and vivacity that characterise it. This careful process culminates in bottling without clarifying or filtering, and an additional 21-month rest in the bottle before release.
