Spontaneous fermentation, without the addition of commercial yeasts, and a prolonged maceration of 25 to 30 days, allow the wine to develop a unique structure and complexity.

Aging in used French oak barrels, which lasts several months, gives the wine subtle and elegant nuances of vanilla, spices, and toast, without overpowering the fruity and mineral flavors that characterize Secreto 2021. This aging process in used wood is crucial to maintaining balance and harmony in the wine, allowing the characteristics of the terroir and grape varieties to fully express themselves.
