Secreto 2021 · Ribeira Sacra
Secreto 2021 is one of the most outstanding wines from Adega Saíñas, a winery committed to sustainable viticulture and the preservation of Galician traditions. It comes from very old vineyards located on terraces next to the Cabe River, surrounded by native forest, in the heart of the Ribeira Sacra.
The vines, planted in granite and clay soils with a bedrock of schist, have developed an intimate relationship with their environment over decades, resulting in grapes that express the full authenticity of the landscape.
The winemaking combines traditional techniques and absolute respect for the grape: manual harvesting, fermentation in open tanks of up to 1,000 liters with 80% whole bunches, and gentle foot pressing. The fermentation is spontaneous, without added yeasts, and the prolonged maceration of 25 to 30 days provides structure and complexity.
The wine ages in used French oak barrels for several months, which adds subtle nuances of spice, vanilla, and toast, without detracting from the fruit and minerality of the terroir. The result is a deep, balanced wine with great aging potential.
