Description
Secreto 2021 is an excellent wine from Adega Saíñas, a winery known for its dedication to sustainable viticulture and the preservation of Galician traditions. The grapes used for this wine come from very old vineyards, located on terraces near the Cabe River, in the Ribeira Sacra region.
These vineyards, nestled in a natural setting and surrounded by native forest, embody the essence of the winery. The vines, planted in granitic and clayey soils with schist parent rock, have developed a symbiosis with their surroundings over the years.
The winemaking process for Secreto 2021 reflects a combination of traditional and modern techniques. Manual harvesting ensures that only the best grapes reach the winery. Vinification takes place in open tanks of up to 1,000 liters, using 80% whole grapes, which are slowly foot-trodden. This technique allows for greater extraction of aromas and flavors, maintaining the freshness and purity of the fruit. Spontaneous fermentation, without the addition of commercial yeasts, and a prolonged maceration of 25 to 30 days, allow the wine to develop a unique structure and complexity.
Aging in used French oak barrels, which lasts several months, gives the wine subtle and elegant nuances of vanilla, spices, and toast, without overpowering the fruity and mineral flavors that characterize Secreto 2021. This aging process in used wood is crucial to maintaining balance and harmony in the wine, allowing the characteristics of the terroir and grape varieties to fully express themselves.
Tasting Notes
Secreto 2021 presents an intense red color with purple highlights. The bouquet is complex and sophisticated, with aromas of red fruits, spices, floral notes, and earthy touches that evoke the landscape of the Ribeira Sacra. On the palate, the wine is structured, with fine, well-integrated tannins that provide a silky texture and a long, spicy finish. The well-balanced acidity ensures that the wine maintains its freshness and liveliness, even after several years of aging.
