Secular 2021 · Ribeira Sacra
Secular 2021 is a premium and award-winning single-vineyard wine from Adega Saíñas, reflecting the harmony between tradition and modernity in Ribeira Sacra. It comes from the Granxa Vella vineyard, planted in the 1960s next to a 13th-century Romanesque church, a place steeped in history and symbolism.
Made with 85% Mencía and 15% Garnacha Tintorera, it comes from old vines cultivated on steep terraces at 300 meters above sea level, on sandy granite soils on the banks of the Cabe river. As was common at the time, these plots combined different varieties, which adds richness and complexity to the wine.
Harvesting is manual, with careful selection of clusters. Fermentation is spontaneous in open 1,000-liter vats, with a 25 to 30-day maceration and gentle manual punch-downs to extract the best from the grapes. Afterwards, it undergoes spontaneous malolactic fermentation and ages in used French oak barrels, where it gains structure, balance, and character.
