Secular 2021 is a premium wine from Adega Saíñas, reflecting the perfect harmony between tradition and modernity in the Ribeira Sacra. This single-vineyard wine is made from grapes from old vineyards of "Granxa Vella", a vineyard dating back 50-60 years, located next to a small Romanesque church from the 13th century.
Produced from 85% Mencía and 15% Garnacha Tintorera, the grapes are grown on steep terraces at altitudes of 300 metres on sandy granitic soils, on the banks of the Cabe River. The vineyards from the 1960-1970 period are characterised by the joint planting of these varieties together with other local ones.
The grapes are harvested manually, ensuring a rigorous selection of the bunches. The wine is made in open 1000-litre tanks, where fermentation is spontaneous. Maceration lasts between 25 and 30 days, with gentle manual pumping over every day, to extract the maximum expression from the grapes. The wine undergoes spontaneous malolactic fermentation and ages in used French oak barrels, which gives it a distinctive complexity and structure.
Tasting Notes
On tasting, Secular 2021 presents a deep red colour. On the nose, it displays aromas of red fruits, spices and subtle mineral touches. On the palate, it is structured and balanced, with firm but elegant tannins and a long and persistent finish.
This wine is a true testament to the winemaking legacy of the Ribeira Sacra, a region where history and passion for wine intertwine to create unique experiences.
