Silente 2021 · Ribeira Sacra (Ribeiras do Miño)
Silente 2021 is produced by Adega Saíñas, a winery deeply committed to sustainable and environmentally friendly viticulture. Its vineyards, located in Espasantes, within the Ribeiras do Miño sub-region, grow on steep terraces between 340 and 420 meters above sea level. The sandy-loam soils, predominantly granite, ensure perfect drainage and, together with optimal sun exposure, allow the grapes to achieve balanced ripeness.
The 2021 harvest, marked by a temperate and regular inland Atlantic climate, was carried out manually in the second half of September, with a rigorous selection of bunches in the vineyard and in the winery. The fermentation was spontaneous, with native yeasts, followed by a natural malolactic fermentation. For aging, 85% of the wine rested in stainless steel tanks and 15% in French oak barrels, achieving a fresh and complex profile at the same time.
