Sinuoso 2021 is an excellent wine from Adega Saíñas, a winery committed to sustainable viticulture in the Ribeira Sacra. Made exclusively from Mencía, it comes from vineyards located between 280 and 320 metres above sea level on granitic and sandy soils, which provides a unique and distinctive minerality. Manual harvesting ensures that only the best grapes are selected, and a double selection of bunches guarantees the highest quality from the first moment.

Spontaneous fermentation, carried out in small stainless steel tanks and in open 1000-litre vats, includes 45% whole grapes. This process is followed by a prolonged maceration of 3 weeks with gentle manual pumping over every day, allowing for optimal extraction of the aromatic and phenolic compounds. Spontaneous malolactic fermentation and ageing in French oak barrels, as well as in stainless steel tanks, give the wine a unique complexity and structure.

Tasting Notes

Sinuoso 2021 stands out visually for its intense ruby ​​red color, which invites tasting. On the nose, fresh red fruits such as cherry and raspberry stand out, accompanied by delicate spicy notes of pepper and clove, as well as a subtle mineral touch that reflects its terroir. On the palate it is fresh and vibrant, with a well-balanced acidity that gives it vitality. The tannins are soft and well integrated, providing a silky texture that envelops the palate.

The finish is long and persistent, leaving a pleasant feeling of balance and harmony. Sinuoso 2021 is a wine that captures the essence of the historic vineyards of the Cabe River and reflects Adega Saíñas' commitment to quality and sustainability. This wine is an authentic and refined expression of Mencía and its terroir.
