Sinuoso 2021 · Ribeira Sacra
Sinuoso 2021, produced by Adega Saíñas, is a red wine that embodies the essence of Ribeira Sacra and the winery's commitment to sustainable viticulture. Made exclusively with Mencía grapes, it comes from vineyards located between 280 and 320 meters above sea level, in granite and sandy soils that give the wine a unique minerality.
The harvest is done manually, with double selection of bunches to guarantee the highest quality. The fermentation is spontaneous in small stainless steel tanks and open vats of 1,000 liters, with 45% of whole grapes. During three weeks of maceration, gentle manual stirring is carried out, which brings finesse and expression to the wine. After the spontaneous malolactic fermentation, the wine ages in French oak barrels and in stainless steel tanks, achieving a perfect balance between freshness, structure and complexity.
