Sinuoso 2021 · Ribeira Sacra
Sinuoso 2021, produced by Adega Saíñas, is a red wine that embodies the essence of Ribeira Sacra and the winery's commitment to sustainable viticulture. Made exclusively from Mencía grapes, it comes from vineyards located between 280 and 320 meters of altitude, on granite and sandy soils that impart a unique minerality to the wine.
Harvesting is done manually, with a double selection of bunches to ensure maximum quality. Fermentation is spontaneous in small stainless steel tanks and open 1,000-liter vats, with 45% whole cluster. During three weeks of maceration, gentle manual pump-overs are performed, which contribute fineness and expression to the wine. After spontaneous malolactic fermentation, the wine ages in French oak barrels and stainless steel tanks, achieving a perfect balance of freshness, structure, and complexity.
