Description
Sinuoso 2021 is an excellent wine from Adega Saíñas, a winery committed to sustainable viticulture in the Ribeira Sacra. Made exclusively with Mencía, it comes from vineyards located between 280 and 320 meters above sea level on granitic and sandy soils, which provide a unique and distinctive minerality. Manual harvesting ensures that only the best grapes are selected, and a double selection of bunches guarantees the highest quality from the first moment.
Spontaneous fermentation, carried out in small stainless steel tanks and open 1,000-liter vats, includes 45% whole grapes. This process is followed by a prolonged three-week maceration with gentle daily manual pumping over, allowing for optimal extraction of aromatic and phenolic compounds. Spontaneous malolactic fermentation and aging in French oak barrels and stainless steel tanks give the wine a unique complexity and structure.
Tasting Notes
Sinuoso 2021 stands out visually for its intense ruby red color, inviting tasting. Fresh red fruits such as cherry and raspberry stand out on the nose, accompanied by delicate spicy notes of pepper and clove, as well as a subtle mineral touch that reflects its terroir. The palate is fresh and vibrant, with well-balanced acidity that lends vitality. The tannins are smooth and well-integrated, providing a silky texture that envelops the palate.
The finish is long and persistent, leaving a pleasant sense of balance and harmony. Sinuoso 2021 is a wine that captures the essence of the historic vineyards of the Cabe River and reflects Adega Saíñas' commitment to quality and sustainability.
