Adega do Vimbio’s Vimbio 2023 is a true reflection of sustainable viticulture in Galicia. Located in Goian, Tomiño, the winery benefits from its proximity to the Minho Valley and Portugal, which brings a unique Atlantic influence. Founded by Martín Crusat and Patricia Elola, who decided to return to their homeland after a decade abroad, the winery is dedicated to low-intervention and organic practices.
The grapes come from vineyards located on soils of shale, clay and riverine pebbles, which adds a unique complexity to the wine. During production, the grapes are harvested manually and fermented with natural yeasts. Traditional techniques combined with careful innovations enhance the sensory profile of the wine, preserving the purity of the Albariño, Caiño Blanco and Loureiro grapes. It is reminiscent of the wines that once came from this region.
Tasting Notes
On the eye, the Vimbio 2023 presents itself with a bright pale yellow colour. On the nose, it displays intense aromas of fresh citrus, green apple and subtle floral notes. On the palate, it is fresh and mineral, with a vibrant acidity that balances its fruity flavours and with a long, saline finish.
