      Description

      Vimbio 2023 · O Rosal (Rías Baixas)

Vimbio 2023, produced by Adega do Vimbio, is a wine that reflects the essence of sustainable viticulture in Galicia. The winery, located in Goian, Tomiño, benefits from the Atlantic influence of the Miño valley and its proximity to Portugal. Founded by Martín Crusat and Patricia Elola after a decade abroad, Adega do Vimbio was born with a clear purpose: to produce organic and minimally intervened wines that purely express the Galician landscape.

The Albariño, Caiño Blanco and Loureiro grapes come from vineyards planted in schist, clay and fluvial boulder soils, which provide freshness, complexity and minerality. Manual harvesting, fermentation with natural yeasts and respectful cellar work allow this wine to evoke the character of the wines that once flourished in this region.

      Pairings

Vimbio 2023 is a fresh, vibrant, and saline white wine, ideal for accompanying seafood dishes and light recipes:

      • Galician cuisine: clams in marinara sauce, razor clams grilled, or scallop empanada.

      • Fish: baked turbot, sea bass baked in salt, or grilled cod with vegetables.

      • White meats: free-range chicken with lemon and herbs or tender stewed rabbit.

      • International dishes: white fish sushi, corvina ceviche, or pasta with clams and white wine.

      • Cheeses: fresh and semi-cured Galician cheeses (Tetilla, Arzúa-Ulloa) or creamy goat cheeses.
