As Abeleiras 2021 originates in a small plot in Meaño, in the heart of the Salnés Valley, one of the most renowned areas of the Rías Baixas for the quality of its vineyards. The sea breeze, optimal sunlight, and decomposed granite soils, rich in organic matter, create a unique terroir that imparts character and minerality to this wine.
This vineyard holds a very special value: it was the first that Pedro Méndez planted with his father in 1996. That family bond is reflected in the care and dedication with which each bottle of As Abeleiras is made.
Winemaking begins with the manual selection of the grapes on the estate. After destemming and a 12-hour maceration at a controlled temperature, the must ferments spontaneously with native yeasts in stainless steel tanks. The wine is aged on its fine lees, with batonnage, without malolactic fermentation, and in this vintage it has not been clarified or tartaric stabilized. Before bottling, only a coarse filtration and a moderate dose of SO₂ were applied, respecting its purity to the maximum.
