      Clarabal is a winery that keeps alive the centuries-old tradition between viticulture and the Cistercian order, whose legacy remains on the slopes of the Miño River. Its philosophy of heroic, organic, and natural viticulture is reflected in each of its wines, authentic witnesses to the landscape and history of Ribeira Sacra.

      The Clarabal red wine comes from a small plot in the Miño Valley. It is made primarily with Mencía, accompanied by a small proportion of Garnacha and native white varieties that give it complexity, freshness and aromatic richness.

      The winemaking process is done traditionally in French oak barrels, with a 7-month aging period in barrels previously used for white wine. This detail gives the wine an extra layer of freshness and subtlety, balancing its fruity character with a refined elegance.

      Tasting Notes

      • Appearance: Medium-high layer, cherry red color with violet reflections that anticipate youth and vivacity.

      • Aroma: High aromatic intensity, with fresh red fruit (cherry, raspberry), floral nuances and subtle notes of roasted coffee and toast from the aging process.

      • Taste: Fresh and silky, with a balanced structure, acidity that enhances its vivacity, and a round, lingering finish that invites you to keep tasting.

      Clarabal is a fresh and silky red wine, with great versatility at the table. Its balanced acidity and fruity character make it an ideal companion for different styles of cuisine:

      • Galician cuisine: zorza empanada, lacón with grelos, or criollo chorizo grilled over embers.

      • Light white and red meats: oven-roasted free-range chicken, stewed rabbit, or grilled lamb chops.

      • Oily fish: salmon in parchment paper, grilled bluefin tuna, or confit cod.

      • International dishes: thin-crust pizza with mushrooms and ham, salmon sushi, or mushroom risotto with Parmesan cheese.
